Adrian Brittain-Limb is the Food Service Manager at The Hayes in Derbyshire. He is a member of the team that provides the catering for several hundred delegates and guests that attend events and conferences at The Hayes every day.
We asked him a few questions about his role here.
My role is to take care of all the catering aspects for our guests. This includes ensuring all dietary needs are met and dealing with all the catering requirements for each event, such as if it is an enhanced meal, dinner night, buffet, special occasion, private wake, or wedding. My role also involves recruiting the right staff for the right job, building a cohesive team within the dining room and catering teams. I manage and look after approximately 50+ staff.

Each day is different with the variety of groups that come through the centre. The grounds make it a very pleasant working environment to be in and the kitchen is probably one of the best equipped I have worked in.
It is a very relaxed, calm, working environment, nothing is too much trouble, and everybody helps out one another. There are very good teamwork ethics.
When I get any spare time, I like to walk around the grounds and the two lakes and listen to all the wildlife. It is a very peaceful and tranquil setting.
I used to be a ballroom dancer in my childhood, winning many competitions up and down the country. When I joined the Army and took up boxing, the dancing helped me with my balance in the ring!
Definitely coffee, to keep me going all day.
I served in the British Army for 25 years and left as a MasterChef. I served in many war zones around the world, on peacekeeping tours and have gained 8 medals for many different campaigns over the last 20 years.
