Summer is just around the corner and there is nothing better than a nutritious meal to keep you going. Providing healthy food at our venues is something we don't take lightly. That is why when we heard all the great reviews of High Leigh's Moroccan salad bar, we had to find the woman behind it.
"My name’s Nadia and I’m from Morocco. I’ve lived in England for 32 years, 12 of which I’ve worked at High Leigh. I love my life here, particularly because my children live close to me. When I started working at High Leigh, preparing food wasn’t part of my job. One day, the chef asked me to make some salads. I decided to create some Moroccan salads, and our guests loved them. From that point onwards, I prepared salads every day for lunch."

"I usually plan which salads to make depending on the lunch menu; they should complement the meals being served. I get to work at 8:30 am each day, and since the salads go out for lunch, I have until noon to get them ready."
